ASHLEY, Pa. — Decorated sugar cookies make the perfect dessert or favor for any special occasion. We met up with Rachel of The Flour Pit Bakery and Sweet Shoppe whose specialty cookies not only taste great but are literally works of art!
When Home and Backyard visited her studio, Rachel shared with us her recipe for Royal Icing, which is the base to decorate the sugar cookies. Rachel also taught us how to flood the cookie perfectly to make for a canvas to add other decorative elements.
Royal Icing by Rachel Mrak
1/2 cup warm water
1/3 cup meringue powder
Mix on high for 1.5 minutes until foamy
Add:
2 tsp lemon juice
4 tsp flavoring (vanilla, marshmallow, almond, etc)
2 Tbs corn syrup
2 lbs powdered sugar
Mix on low until sugar is incorporated, then increase to medium speed and mix for 6 minutes. Store in an airtight container.
We also learned how to make a daisy with royal icing.
