SCRANTON, Pa. — A great way to celebrate St. Patrick's Day is with a delicious Irish Soda bread and a good old Irish Stout brew. Home and Backyard managed to score both all made at Cooper's Seafood House in Scranton!
Irish Soda Bread Recipe
combine
4 cups flour
1/4 cup sugar
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons butter cubed
(whisk together and add butter)
it will become a dough-y consistency.
1 cup raisins (bloomed in water)
strain raisins
add a shot of Jameson
add on egg beaten
1 3/4 cup buttermilk
fold into mixture.
Form and kneed dough into a mound.
shape dough to to pie shape and mound.
Make a cross in the middle with a knife or your finger
Paint with egg wash
Bake in oven at 350 for about 40 minutes

We also met up with Jesse Cooper the brew master at Cooper's Brewing. We learned a bit about the craft beer and seasonal options they brew at their on-site micro-brewery.
