Venison Sausage and Gravy

A simple venison breakfast recipe that will stick to your ribs.

MOOSIC, Pa. — Jake will prepare his recipe for venison sausage and gravy.  This is a simple recipe that you can make in a hurry that's guaranteed to please your whole family for breakfast.

Venison Breakfast Sausage

Ingredients

•    2 pounds ground pork/venison 

•    1 teaspoon dried sage 

•    1 teaspoon garlic powder 

•    2 teaspoons kosher salt 

•    1 teaspoon ground black pepper 

•    1/4 teaspoon dried oregano

•    1/4 teaspoon thyme

•    1/4 teaspoon crushed red pepper flakes 

•    1 pinch ground cloves 

•    1 tablespoon brown sugar 

Put all of the dry ingredients in a spice mill and blend them to a powder. Mix the meat, brown sugar and blended spices together. It should rest overnight before using. Enjoy! 

Sausage Gravy over English Muffins

•    1 pound venison breakfast sausage

•    4 tablespoons of butter

•     1/3 cup flour

•     3 cups of milk

•     Salt and pepper to taste

Break up the breakfast sausage and brown in a frying pan. Once the meat is browned add the butter and allow it to melt. Sprinkle flour over the sausage and continue to stir for a couple of minutes. Slowly add about 2 cups of milk stirring continuously, it will slowly thicken. Add more milk to reach your desire thickness. Spoon over biscuits or English muffins.
