3 two ounce veal top round Scallopini
Flour for dredging
1/4 cup cherry tomatoes
1/4 cup wild mushrooms
2 oz. veal or chix stock
1 oz. Marsala wine
1/2 oz. heavy cream
1 oz. jumbo lump crab
2 oz. ricotta gnocchi
1/2 oz. diced shallots
1/2 oz. butter
Sautee veal until brown on both sides
Remove from pan.
Add mushrooms and cook.
When mushrooms are done add tomatoes and shallots.
Add gnocchi
De glaze with Marsala
Add veal stock
Reduce and Finish w/butter and cream
Bruschetta 3 Shrimp cut up
1/2 cup roasted cherry tomato
1/4 cup roasted and chopped wild mushrooms
1 oz. diced garlic
1/4 cup blended cheese (Mozz, provolone, cheddar, or whatever you like.)
1 piece grilled garlic bread
1 oz. white truffle oil
1 saute’ shrimp with extra virgin olive oil, add garlic
. Add tomato and mushrooms
Add a little cheese
grill or toast garlic bread
Place shrimp mixture atop garlic bread, melt remaining cheese on top, slice and serve
