Fred Magnotta prepares an Italian Potato Salad perfect for a tailgate party.
Italian Potato Salad
Boil a dozen potatoes with skins on.
Peel potatoes
Cut potatoes into bite sized pieces.
Coat completely with extra virgin olive oil. Be generous.
Add roasted red peppers chopped.
A can of black olives.
Add salt and pepper to taste
Add fresh basil
Add more olive oil.
Let sit over night. ( If you are letting it over night, add basil when you remove it from the refrigerator)
