Clams with sautéed Sherry and Chorizo - Olde Brook Inn
1 teaspoon chopped garlic
1 teaspoon chopped shallots
2 tablespoons extra-virgin olive oil
1 cup stock (vegetable or chicken)
pinch fresh parsley
1 tablespoon butter
1/2 cup of sherry wine
In pan saute' garlic and shallots in olive oil.
Add clams, de-glaze with sherry wine.
Add stock and cover.
When clams open add parsley and butter.
Serve with bread, crackers or over pasta.
