Pacers Clubhouse Red Garlic Sauce – can be used for chicken wings or whatever your heart desires.

Butter, Chopped Garlic, Light Brown Sugar, Red Wine Vinegar, Thyme – fresh preferably but dried will work, Hot Sauce – this can be your personal preference but we use Franks, Honey, Molasses, Ketchup

Method of Preparation:

1. In a small sauce pan add your butter and garlic and simmer on a medium heat. You do not want the garlic to brown. You are looking for a very light golden color.

2.Add remainder of ingredients and blend well.

3. Continue to simmer on a medium heat for an additional 5-7 minutes being sure to periodically stir so it does not burn.

Toppings - Butter, Bacon Bits, Scallions, Cheddar Cheese, Caramelized Onions, Sautéed Mushrooms, Gorgonzola, Grilled Chicken, Horseradish, Sour Cream, Mozzarella Cheese, Pulled Pork, Rosemary, Sauerkraut, Corn

Firecracker Nuts

Shelled Nuts of your preference – salted or unsalted – pecans & cashews work great!!

2 ea. Egg Whites, ½ tsp Table Salt, ¼ cup Granulated Sugar, ½ tsp Chipotle Powder, ½ tsp Ground Cayenne, ¼ tsp Ground Cumin, ¼ tsp Ground All Spice

Directions

1. Preheat oven to 300 degrees. Beat egg whites to medium peaks. Combine all   remaining ingredients except nuts; whisk into egg white. Stir in Nuts until well coated; spread mixture in single layer onto an un-greased baking pan.

2. Bake nuts for 15 minutes, and then remove from oven. Using a metal spatula, toss, stir, and separate nuts. Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again. Place baking pan on wire rack to cool (they will crisp as they cool). Break up any that stick together.
