Mango, Black Bean and Crab Relish with Grilled Atlantic Salmon

Elizabeth's An American Bistro
Serves two, but with extra relish
2 Filets of Atlantic Salmon 6 ounces a piece
Olive Oil, Salt and Pepper to taste
Oil and Season Salmon with Salt and Pepper and Grill 4 minutes on each side over medium high heat
Relish
1 Tablespoon Honey
¼ cup Diced Chilies (jalapeno or spicy green chili)
½ red onion diced
½ red pepper diced
1 papaya diced
1 mango diced
2 tablespoons of fresh chopped cilantro
The juice of 2 limes
¼ cup of black beans
4 ounces of lump crab meat
Salt and Pepper to taste
2 Tablespoon of Olive oil
Place all ingredients in a bowl and mix together yields about a qt of relish, enough to have as a fun snack the next day
Cilantro Mashed Potatoes
3 Russet Potatoes, Peel and Boil until tender
½ cup of heavy cream
2 teaspoons of butter
2 tablespoons chopped cilantro
Salt and White Pepper to taste
Make Mash Potatoes and fold in Cilantro at the very end
