Ritter's Market Corn Salad
5 ears of Ritter’s sweet corn, shucked 1/2 cup diced red onion (1 small onion) 2 cups of cherry tomatoes
3 tbsp cider vinegar
3 tbsp olive oil
1/2 cup fresh basil salt & pepper to taste
Place corn in pot of boiling water for 3 minutes. Remove corn from pot
and place in bowl of ice water to immediately stop cooking. Cut kernels off the corn cobs and place bowl. Toss in the tomatoes, onion, olive oil and vinegar. Season with salt and pepper. Add fresh basil just before serving.
