Grilling season is here!  Join chef Mertz at the Top of the 80's in Hazleton, and learn how to prepare Citrus Shrimp and Scallop Skewers with a Pomegranate and Pineapple Salsa.on the grill.

3  large scallops
3 large shrimp
Marinade
1/2 orange and zest
1/2 lemon and zest
1/2 lime and zest
1 sprig fresh rosemary
pinch salt and pepper
1/4 cup extra virgin olive oil

Mix marinade, place seafood in for 10 minutes.  Spray the grill with cooking oil, place shrimp and scallops on grill.  Grill on both sides.  Skewer seafood and serve with salsa.

Salsa
1/4 pineapple
1 Pomegranate
2 sprigs cilantro
1 tablespoon extra virgin olive oil
1 green pepper diced in squares
1/4 purple onion
pinch salt, pepper, red pepper flakes
