We visit the students of the Culinary School at Lackawanna College and see how they create treats that no ghoul or goblin can resist.

Bones and Blood

Ingredients

6 large egg whites

1 1/2 cups sugar

Directions

Preheat oven to 200 degrees.

  1. Place egg whites and sugar in the metal bowl. Set bowl over a pan of simmering water and whisk constantly until sugar is dissolved and mixture feels warm to the touch. Mixture will be ready when you no longer feel granules of sugar and will take about 5 minutes.
  2. Transfer the warm mixture to the bowl of an electric mixer OR keep in metal bowl if you will be using a hand mixer. Mix with the whisk attachment. Beat on high speed until very stiff peaks form, about 8 minutes.
  3. Transfer meringue to a pastry bag fitted with a 1/2-inch plain round tip. Pipe bone shapes (pipe heart shape on each end and connect with a line. Bake until crisp throughout, about 1 hour. Let cool completely then carefully peel away from parchment paper

Spider Pancakes with Beetlejuice (blood!)

Ingredients

1 ½ cups All-Purpose Flour

2 teaspoons of Baking Powder

½ teaspoon Salt

1 Tablespoon Sugar

1 Egg, beaten

1 ¼ cup Buttermilk

2 Tablespoons butter

¼ cup Maple syrup

¼ cup mixed berry puree

Instructions

  1. Slowly heat the griddle for about 15 minutes.
  2. Sift together dry ingredients, Flour, Baking Powder, Salt and Sugar, set aside.
  3. Mix together wet ingredients, Egg, Buttermilk and Lard, set aside.
  4. Test the griddle: Place a few drops of cold water on griddle, if they dance about, griddle is ready.
  5. Stir the wet ingredients into the dry until just slightly dampened. Ignore the lumps.
  6. Pour batter into a squeeze bottle.
  7. To make webs, draw two circles with batter. Starting from center of smaller circle, draw lines of batter outward towards second circle. Use nozzle of squeeze bottle to drag batter threw circles creating the web look.
  8. For spiders, use bottle to draw a long oval for body. Add four batter legs on each side of oval.
  9. Webs and spiders will cook quickly! Flip when small bubbles form.
  10. Cook second side for another 30-60 seconds. Remove from griddle
  11. Rub the griddle with the salt bag between making each pancake to clean, if needed.
  12. Add just a little oil to lightly grease the griddle before adding more batter.
  13. To make blood, combine syrup and purchased mixed berry smoothie base.
  14. Serve together.

Candy Corn Salad

Ingredients:

1 qt vanilla flavored Greek yogurt

1 pineapple, diced small

I cantaloupe, diced small

Instructions:

  1. Pour ¼ cup of yogurt in the bottom of clear glass.
  2. Add a layer of cantaloupe then a layer of pineapple

Blood Transfusion

Ingredients:

1 Liter of club soda

1 bottle of blueberry pomegranate juice

Instructions:

  1. Fill a clear glass halfway with club soda.
  2. *Fill a toy plastic syringe with juice.
  3. Serve syringe in glass and let children add the “blood” to the drink!

*Do NOT use a real medical glass syringe with children. Fake ones can be purchased at a Halloween store or online.
