Corn Cucumber Compote
Settler’s Inn Recipe
Ingredients:
2.5 Lbs Corn – FRESH OFF THE COB
2 Packed Cups Mizuna, tot soi or other farm greens
1 ¾ Cups Feta Diced
½ Cup Cilantro
4 ½ Cups Diced Heirloom Tomatoes (especially ends)
1 ½ Cups Chopped Olives
1 Cucumber Diced
1 Bunch Scallions
1 Small Red Onion or ½ large – MINCED
2 Tbsp Chopped Garlic
¼ Cup EVOO
Salt and Pepper
Procedure:
- Mix All Ingredients

Corn Puree for Scallop Dish
Settler’s Inn Recipe
Ingredients:
2.5 lbs Corn
2 Tbsp Sugar
2 Quarts Heavy Cream
2 Quarts Vegetable Stock
5 Garlic Cloves
1 Bay Leaf
Pinch Cayenne
Salt and Pepper
Procedure:
- Simmer all ingredients until corn is very Tender
- Puree with large power stick
- Strain
