Connor's Grillroom in Dallas  is fine dining in a casual setting.  Watch as Chef Mat Gilbert prepares Roasted Scottish Salmon with Brussel Sprout Pork Belly Hash.

2 1/2 oz.  of chopped  braised pork belly.
6 blanched fingerling potatoes  cut on a bias.
7 Brussel sprouts halved and roasted.
1/2 shallot chopped
2 tablespoons pork belly braising liquid or beef demi.
Pan roast the pork to get the juices.
pour juice into pan
add potatoes (until they get light brown color)
add Brussel sprouts to pan
add shallot
add braising liquid or demi to pan so it does not dry out.

Sherry Drizzle
1/2 cup Cream Sherry
1 tablespoon sugar
Reduce to thin syrup consistency,

Salmon
1 filet Scottish Salmon
add oil to pan
Let pan get smoking hot
Allow one side to get crispy
Flip to other side and add butter
