Cusumano in Old Forge is noted for their delicious hand-crafted pastas, pizza and fine dinner menu.   They prepare an amazing lobster pasta dish.

Recipe for lobster pasta:

-8 oz. lobster tail cut into 1" medallions

-3/4 c. Marinara sauce

-1/2 c. Fish stock

-1 tbs. shellfish Demi glacé

(This is simply a fish stock reduction )

-2 tbs. extra virgin olive oil

-4 tbs. butter

-Three to five leaves of fresh basil cut into large strips

-1/2 c. flour for dredging

- 1/4 lb. fettuccine (homemade works best, but store bought is just fine)

Directions:
Bring 3 qts. water to a boil.

Heat a sauté pan over medium heat and add 2 tbs. butter and the oil. At this time lightly flour the lobster medallions and add to pan. Flip once they are golden brown. Add fish stock, Demi glacé, and marinara sauce. Simmer over medium heat until lobster is cooked and the sauce reduces. Lower heat and add cooked fettuccine and remaining butter. Turn off heat, Toss in fresh basil and enjoy!
