Chef Steve Marquette of Terra Preta makes a delicious Pork Belly Broth with Rice Noodles. Terra Preta is a farm to table restaurant in Scranton.
Rub for Pork Belly
3tb. fennel seeds
1tb. mustard seeds
1tb. star anise
1tb. coriander
2tb. ginger
1 cinnamon stick
1tb. cloves
Grind ingredients in food processor or coffee grinder.
Braise in Oven:
Cover pork with foil
Add celery, carrots, and onion for flavor
Add 1 cup of water
Braise for 3 hours in oven at 350 degrees
Soup:
Combine Pork broth from braise in the oven
Add Rice Noodles
Cut up pork into bite-size portions
Simmer all on stove, add to bowl, enjoy.
