GRILLED PORK CHOP, CANDIED SWEET POTATOES, GINGERED APPLES, AND MUSTARD SAUCE by Sarah Mccully

PORK CHOP
Any center cut pork chop, boneless, bone in, dusted with salt and pepper, grilled to your liking.

CANDIED SWEET POTATOES
Ingredients:
Two large sweet potatoes, peeled and chopped into ½ inch cubes, about 6 cups
2 tablespoons butter
2 tablespoons brown sugar
½ teaspoon cinnamon
Salt and pepper to taste
1 cup mini marshmallows
In a sauté pan, melt the butter, and add the sweet potatoes. Sauté for ten minutes until the potatoes begin to get soft. Dust with brown sugar, cinnamon, and salt and pepper. Bake in a 350 degree oven for twenty minutes stirring occasionally. Top with marshmallows and toast quickly in the oven.

GINGERED APPLES
Ingredients:
2 granny smith apples, sliced into pieces
2 tablespoons butter
1 teaspoon grated fresh ginger
