Pastid (Macaroni Pie)
1. ..cook one pound linguine al dente, drain reserving 1 cup pasta water.
2...add 1 tablespoon of Shortening to pasta to melt
3...beat 1 dozen eggs well, add 1 1/2 heaping cups of Pecorino and 1 tsp coarse black pepper.
4...mix eggs, cheese and pasta water with pasta.
5....pour mixture into well-greased 9x13 pan
6...bake one hour uncovered at 350 degrees
Crepe..
1...one cup flour, one egg, one cup water, pinch salt
2...Mix thoroughly
3..scoop two ounces into a lightly oiled medium hot non-stick skillet, when small bubbles form, flip crepe. Wait 30 second remove from skillet.
Filling...
1... 1 1/2 pounds ricotta,8oz shredded mozzarella,4,oz Pecorino, 1 egg, 1 tablespoon parsley
2...mix well.
3.. Place one crepe on plate and fill with 3oz cheese mixture. fold and place seam side down into baking dish..that has your favorite marinara in it.
4..After putting all manicotti in dish, cover with sauce and bake for fifteen minutes uncovered at 375 then top with mozzarella and bake until melted
