Holiday Vegetable Casserole

Jim Coles and his wife Val make a vegetable casserole dish for the Holidays

Recipe:
Ingredients:
Carrots
Celery
Baking Potatoes
Onions
Cherry Tomatoes
Paprika
Chopped Fresh Parsley
Margarine
Depending on how much casserole you want to make, prepare equal parts of above ingredients and chop first 4 ingredients into 1 inch pieces.
Toss in a large bowl.  Add parsley and paprika so vegetables are covered.  Put vegetables in a baking dish and place pads of margarine throughout.
Cover tightly with aluminum foil and bake for approximately 2 hours at 350 degrees.
