In Vicksburg, right outside of Lewisburg is the Vicksburg Inn, a charming Bed and Breakfast built in the 1800’s. The innkeepers, Peggy and Tony gave us a tour and made breakfast.
Baked Eggs with Canadian Bacon
6 slices of Canadian Bacon
12 tablespoons of grated cheddar cheese
6 tablespoons of salsa (optional)
6 slot muffin tin
3 English muffins split
Preheat oven to 350 degrees.
Spray a large muffin tin with canola oil.
Place a slice of Canadian bacon (cut to size) in each individual tin.
Put 1 tablespoon of salsa on bacon (optional).
Break an egg in each muffin cup.
Place 2 tablespoons of cheddar cheese on top of each egg.
Bake for 15 minutes.
Loosen eggs with a knife.
Place each egg on a toasted English muffin half.
