Garlic Lime Chicken w/ Pineapple Jalepeno Salsa

It’s the perfect dish for a Memorial Day picnic. Blogger Christina Hitchcock of It’s a Keeper, prepares Garlic Lime Chicken with Pineapple-Jalepeno.

Garlic Lime Chicken
1 clove fresh garlic, minced
1 Tbsp fresh onion, minced
3/4 tsp cumin
3/4 tsp dried oregano
1/2 tsp dried cilantro
1/2 tsp black pepper
1/2 tsp salt
1/4 cup orange juice
1/4 cup lime juice (1 medium lime)
2 Tbsp olive oil
2 lbs boneless, skinless chicken breasts

Combine first ten ingredients in a ziploc bag.  Add chicken to bag, making sure that all of the chicken is evenly coated with the marinade.  Refrigerate for at least 30 minutes or up to several hours.

Remove chicken from bag and discard remaining marinade. Grill until the chicken’s juices run clear.  Serve with Pineapple-Jalapeno Salsa.

Pineapple-Jalapeno Salsa
16 oz pineapple chunks, cut into quarters
1 jalapeno, seeded and finely chopped
1/2 cup finely chopped red bell pepper
1/8 cup finely chopped onion
1/4 lime juice (1 lime)
4 Tbsp chopped parsley
2 tsp light brown sugar
1/4 cup orange juice

Combine all ingredients in a medium bowl.  Cover and refrigerate until ready to use.  Serve with Garlic Lime Chicken.
