Grassi’s Veal Champagne

Visit Grassi's Restaurant where Chef Cody Sliker prepares a delicious Veal Champagne dish.


4 veal medallions
1/4 cup cream
3 sliced mushrooms
1 Roma tomato (diced)
1 bunch scallions(diced)
1/4 cup sweet vermouth
1/4 cup sparkling wine
1 T butter
Veal Champagne - Take pounded veal and brown in hot oil.
Once browned, sautee mushrooms and deglaze with sweet vermouth and and sparkling wine.  Once wine has reduced, add cream and cook down.  Finish with butter and tomato and scallions.
