Fried Chicken Linda’s Way

Ingredients:

Chicken Parts (skinned or skinless)

Sazon seasoning (3 individual packets)

Granulated Garlic (3 tbsp.)

Onion Powder (3 tbsp.)

Yellow Mustard (1 tbsp.)

Hot Sauce (1 tbsp.)

Ground Black Pepper

Half and half (1/3 cup)

Vinegar (1 tbsp.)

All-purpose flour (2 cups)

Vegetable cooking oil (48 oz.)

Wash and thoroughly clean all chicken parts, in a large bowl include sazon seasoning, granulated garlic, onion powder, yellow mustard, hot sauce, ground black pepper, half and half and vinegar. Rub all seasonings thoroughly through each chicken part.

Using a large frying pan or deep fryer, pour vegetable oil in. Turn on a medium flame until oil is hot

While oil is heating pour all-purpose flour into a bowl adding each piece of seasoned chicken and rolling around in the flour until covered shake each piece of chicken and drop into hot grease.

Turn control on stove up a little and let cook until chicken begins to brown.

Turn chicken over making sure all sides are cooked thoroughly as well as browned evenly.

When chicken is done take out of pot making sure to place on straining rack to make sure all extra oil falls off.

This recipe is being prepared to serve 6 to 8 people

 Baked Macaroni and Cheese Linda’s Way

Ingredients:

Elbow Macaroni (1 pound box)

Eggs (4 large)

Milk (1/2 cup whole or 2%)

Half and Half (1/2 cup)

Lawry’s season salt (few pinches)

Iodized salt (few pinches)

Ground Black Pepper (few pinches)

Yellow Mustard (2 tbsp.)

Cheese (2 blocks cracker barrel extra sharp, one cup of mild cheddar cheese, 1 cup of colby jack, ½ cup mozzarella, ½ cup provolone, ½ cup monetary jack ( or any cheese combination you may prefer)

Butter or Margarine (1/2 stick)

Vegetable oil (1 tbsp.)

Bread Crumbs (1 cup)

In a large pot bring to boil 6 cups of water put 1 tbsp. of vegetable oil in pot ( so that noodles will not stick together), pour noodles into boiling water stirring with a wooden spoon for about 8 minutes or until noodles are soft. Pour noodles into strainer until all water is drained. Pour noodles in baking pan adding butter, and stirring thoroughly until melted. Add 4 eggs, lawry’s seasoned salt, milk, half and half, iodized salt, black pepper, mustard, and stir until all seasonings are mixed through thoroughly. Chop or shred all cheeses (whichever you choose).  Begin to mix in mixture of all cheeses and stir so that cheese is throughout macaroni mixture. Smooth across top of macaroni adding a top layer of all cheeses and bread crumbs (you can use regular or Italian bread crumbs).

Preheat oven to 300 degrees when oven is ready place baking pan in the oven and cook for about 45 minutes. Leave uncovered until browning on top and then cover with aluminum foil for balance of time.

This recipe will serve approx. 8-12 people.
