Recipe for Apple Chili Braised Short Ribs:


beef lb 7.5
onion lb 0.5
carrots lb 0.25
thyme oz 0.25
salt and pepper cup 1
beef stock gallon 3
Fuji apples lb 0.5
Plablanoes ech 1
Chadsford wine btle 0.75

do not peel carrots
peel onions
core apples and seed chilies
rough chop all ingredients
season and brown short ribs in a hot pan with oil
after the beef is all done add mirpoix lightly caramelize
deglaze with the Chadsford and reduce by 1/2
add every thing to the pot
bring to a boil turn down to simmer
cover with aluminum and place in a 325 oven for 3-4 hours
or until the meat is tender
