Huevos Rancheros

Serves: 2

Ingredients:

4 eggs

2 12-inch Flour Tortillas

1 cup pulled pork(prepared)

½ cup Salsa(prepared)

¼ cup Black Beans

Salt and Pepper to taste

Directions:

  • Crack 4 eggs into a bowl to ensure there are no shells.
  • Scramble the eggs in the bowl, adding salt and pepper to taste
  • Heat a Non-Stick skillet until it is hot and put the eggs into the pan
  • While the eggs are cooking, halve each tortilla and place on a plate
  • Place the pork and the salsa on opposite corners of the plate
  • When the eggs are finished(about 5 minutes), place them in the middle of the plate
  • Sprinkle the black beans over the eggs
  • Serve and Enjoy!

BBQ Rub

Ingredients:

 2 cups Brown Sugar

1 cup Paprika

1 Tablespoon Salt

1 Tablespoon Pepper

1 Tablesspoon Garlic Powder

1 Tablespoon Onion Powder

Directions:

  • Mix Thoroughly

 Use this base for a BBQ rub on top of  pork, brisket and ribs and add your own favorite flavors.  Some ideas are coffee grounds, red pepper flakes, powdered ginger and anything else you can come up with!

 Big Pig Burger

Serves: 2

Ingredients:

1 Lb. Ground Beef, formed into 2 Burgers

1 cup Pulled Pork(prepared)

2 Tablespoons Roasted Jalapenos

4 strips of bacon

2 Leaves of Romaine lettuce, washed and cut in half

1 Tomato, cut into slices

Cheddar Cheese(or your favorite cheese)

2 Kaiser rolls

Salt and pepper to taste

Directions:

  • Grill burger to your liking
  • At the same time, grill bacon and toast bun
  • 1 minutes before burger is finished, top with jalapenos
  • Top jalapenos with Cheddar cheese and melt the cheese
  • Place burger on bun and top with bacon and pulled pork
  • Top pulled pork with lettuce and tomato
  • Serve and enjoy!

 Brisket Cheese Steak

Serves: 2

Ingredients:

Smoked Brisket, Sliced Thin into 4 slices

2 Tablespoons White Onions

American Cheese

2 Kaiser Rolls

Directions:

  • Saute the Brisket with your favorite sauce over medium high heat in a pan
  • Saute the Onions next to the Brisket in the same pan
  • Fold over the Brisket and top with Onions and Cheese
  • Melt cheese
  • Transfer to the bun and enjoy!

Smoked Potato Salad:

12-14 Servings

Ingredients:

8-10 Medium Russet Potatoes, skinned and diced

1 Cup Mayonaise

½ cup Yellow or Dijon Mustard

¼ Cup fresh Dill, chopped finely

1 Tablespoon Sugar

Salt and Pepper to taste

Directions:

  • Preheat Oven to 400°
  • Place potatoes in pot, cover with water and blanch(boil) for 3 minutes
  • Take potatoes out of water(they should be firm but partially cooked)
  • Arrange Potatoes on cookie sheet and smoke for 20 minutes(optional step)
  • Roast Potatoes in an oven for 10 minutes in a 400° oven until tender but still firm
  • Place potatoes in a mixing bowl with all of the ingredients and mix together well
  • Salt and pepper to taste

Asian Wrap:

Serves: 2

Ingredients:

2 Cup Pulled Pork(Prepared)

¼ Cup Pickled Red Onions

1 Cup Cabbage, shredded finely

¼ Cup White Onion, Diced Finely

¼ cup Carrots, julienned(cut into thin strips)

2 12 inch Tortilla wraps

1 Tablespoon Mayo

½ teaspoon sriracha hot sauce(optional)

Directions:

  • Combine Pork, Pickled onions, and Spicy Coleslaw into two Tortilla Wraps
  • Wrap Tortilla and toast on a grill, 2 minutes on each side

 Spicy Coleslaw:

  • Combine cabbage, white onions, carrots, mayo and hot sauce into bowl and mix well
  • Salt and pepper to taste

BBQ Shrimp Salad:

Serves: 1

Ingredients:

 2 cups of Romaine lettuce, shredded

¼ cup Red Onion, diced

¼ cup carrots, Julienned (cut into thin strips)

½ cup Croutons

¼ cup tomatos, diced

1 teaspoon BBQ rub

6 Medium size shrimp, peeled and deveined

Salt and Pepper to taste

Directions:

  • Season shrimp with BBQ rub and Salt Pepper
  • Saute Shrimp on both sides over medium high heat in a pan, until they are a bright pink(about 7 minutes)
  • Arrange lettuce, Onions, carrots, croutons and tomatoes on  a plate
  • Top with BBQ shrimp and serve
