EASTER PASKA FRENCH TOAST

6    ½ -3/4  IN SLICES OF PASKA BREAD

EGG DIP:  3  EGGS

1 CUP MILK

1 TSP VANILLA

1TSP CINNAMON

Melt margarine in a fry pan on medium heat.

Combine the egg dip ingredients in a large bowl and mix until all are combined.

Dip Paska slices in egg mixture and cook in pan until golden brown.

Approximately 2-3 minutes each side

Serve topped w/butter and powdered sugar.

 HONEY LIME FRUIT SALAD W/ POUND CAKE CROUTONS

Fruit Salad

1 Cup each cut and cubed:   apple, pear, banana, peach, melon, pineapple, blueberries, strawberries

Combine fruits with 1 cup of orange juice and 2 TBS of lemon juice. Stir to coat fruit w/ juices.  Cover and refrigerate for 2 hours. Mix thoroughly before serving.

Honey Lime Dressing

1/3 cup honey and  1/4  cup lime juice (from about 1 lime)

Pound Cake Croutons

8 oz. pound cake sliced into bite-sized cubes

Place cubes on a baking sheet in a 350’ preheated oven and bake for 12 minutes, turning twice, until golden.

Spoon the salad into individual serving bowls, drizzle with the Honey Lime Dressing, and then top with the Pound Cake Croutons.  Makes about 6 cups.

BANANAS FOSTER WAFFLES

Waffles (homemade or your favorite frozen brand)

Vanilla Ice Cream

8TSP(1stick butter)

16 TBS Brown sugar

  2 sliced ripe bananas

 ½ cup chopped walnuts

Melt butter and brown sugar in a small pot on medium heat.  Cook until bubbly. Lower heat and add banana slice and walnuts.

Place warm waffle on plate, top with scoop of ice cream, then spoon warm Bananas Foster sauce on top. Whipped cream is also a nice finishing touch.  Makes 2-3 waffles. 

BROWN SUGAR BACON TWISTS

1 pound bacon

1 ½ cups brown sugar

Spread brown sugar on plate. Press slices of bacon onto brown sugar. Flip to coat both sides of bacon.  Twist each slice and place on a foil lined baking sheet.  Bake at 400’ for 15min or until crispy.

POACHED EGGCELLENCE

-2 poached eggs                                                                                                                                                        -toasted english muffin

slices red onion, 2 slices tomato, 2 slices fresh mozzarella, 4 slices avocado

Your favorite Hollandaise sauce (homemade or a mix)

On a serving plate top each English muffin ½ with 1 each: tomato slice, mozzarella slice, red onion slice, and avocado slices. Carefully place 1 poached egg on each and finish with prepared Hollandaise sauce.

STRAWBERRY BAKED STUFFED FRENCH TOAST

1 1/2 loaves dense bread cubed, 8 oz cream cheese small chunks

12 eggs, 11/2 cups half & half, 2 tsp cinnamon, 2 tsp vanilla

 Spray a 9x13in cake pan with pan coating.  Line the bottom ½ of the bread cubes.  Spread the cream cheese chunks over the layer of bread cubes.  Place the remaining bread cubes over the cream cheese.  Combine remaining ingredients and mix well.  Pour over the bread cubes and refrigerate overnight.

 Prior to baking, melt 2 sticks butter and 1 ½ cups brown sugar in a pot on medium heat.  Cook until bubbly.  Pour over bread cubes.  Bake at 350’ for 25 minutes or until eggs are not runny.

Serve slices with sugared strawberries and whipped cream.
