Melta Tblsp. of whole butter, into a hot skillet.
Add pumpkin gnocchi ( made with roasted pumpkin puree’). Let it caramelise a bit to bring out sweetness.
Add chopped short rib pieces (that have been marinated in veal stock, celery, onions, thyme and red wine).
Add residual liquid from ribs.
Mix and add a pinch of salt and pepper.
Mix in a pinch of chives, parsley and fresh thyme.
Plate the dish and garnish with Amish Cheese crumbles and roasted pumpkin seeds, chives and parsley.
