Potteiger House Sun Dried Tomato Omelet

3 eggs

Sun Dried Tomatoes Chopped

Grated Romano Cheese

Butter, to coat frying panFresh basil and flat leaf parsely, chopped finely

In bowl, crack eggs, whisk in sun dried tomatoes, basil and parsley and grated Romano cheese (amount to your liking).

Heat frying pan with butter.

Pour omelet mixture into pan.

When omelet is ready, fold it in half and let fry a bit more.Sprinkle cheese and a bit of sun dried tomatoes.
