Mom’s Sauce and Meatballs

Sauce Ingredients
8 cloves garlic, thickly sliced
3/4 cup olive oil
2 lbs boneless pork ribs (country-style), trimmed and cubed
2 lbs boneless chuck roast, trimmed and cubed
1 28-oz can crushed tomatoes
1 28-oz can tomato puree
1 28-oz can plum tomatoes
2 12-oz cans tomato paste
9 cups water
medium bunch fresh basil, torn (or 3/4 cup dried)
medium bunch fresh flat-leaf parsley, chopped (or 1/2 cup dried)
garlic salt to taste
3 tablespoons black pepper
3 tablespoons salt
4 tablespoons sugar
4 bay leaves
1/2 cup grated parmesan cheese
3-X-2 whole wedge romano cheese

Sauce Directions
In a very large pot, heat olive oil over medium high heat; add garlic, pork rib cubes and chuck roast cubes. Season with black pepper and garlic salt; brown. When meat is brown, add crushed tomatoes, tomato puree, plum tomatoes, and tomato paste. Stir. To that add water, basil, parsley, pepper, salt, sugar, and bay leaves. Stir again. Add parmesan cheese and whole romano wedge (it will melt as sauce cooks). Heat until boiling. After it boils, turn heat down to low-to-medium and continue to simmer with lid on, at least 4 hours, stirring occasionally. (Your house will smell fabulous!!)
Meatballs Ingredients
3 lbs lean ground beef
1 lb ground pork
4 eggs
1 cup italian-style bread crumbs
3/4 cup grated parmesan cheese
olive oil
salt and black pepper to taste
garlic salt to taste
Meatballs Directions
While sauce is cooking, prepare the meatballs by combining beef, pork, eggs, bread crumbs, cheese, and pepper/salt/garlic salt to taste. Mix well with hands. Form uniform-size meatballs and fry in olive oil. Drop cooked meatballs into sauce.
