1 pound crab meat, free of shells
1 1/2 teaspoons Old Bay Seasoning
pinch of salt (optional)
1/4 teaspoon dry mustard
1 egg, beaten
3 slices white bread, crusts removed
2 to 3 tablespoons of mayonnaise
Mix together eggs and mayonnaise, Old Bay and dry mustard. Tear bread apart in small pieces. Add to egg mixture and mix until it reaches a pudding-like consistency. Fold in the crab meat gently.
Heat vegetable oil.
Form crab cakes and cook in the hot oil until golden brown. Smaller, flatter cakes cook quicker.
Makes six or seven cakes.
