2 chicken breasts pounded until very thin
Flour with salt and pepper added
1 cup Extra Virgin Olive Oil
Tomatoes (break so juices are released)
3 cloves of Garlic (Chopped and smashed)
2 Teaspoons of sugar
1 onion cut in slivers
1 tablespoon of lemon juice2 teaspoons of sugar
Combine garlic, onion and tomatoes with 1 cup of extra virgin olive oil, add 2 teaspoons of sugar and one tablespoon of lemon juice and fresh ground pepper and salt to taste.
Cover and refrigerate.
ChickenAdd olive oil to Sautee’ pan until pan becomes hot. Take chicken and dip both sides into flour. Sautee’ for 2 minutes on each side until golden brown.
Cover chicken with salad greens and pour tomatoe mixture on top and serve.
