Swedish Eggs

2 Tablespoons butter

6 eggs

8 ounces. monterey jack cheese, grated

1 cup small curd cottage cheese

1/4 cup flour

1/2 teaspoon baking powder2 cups finely chopped ham (optional)

Preheat oven to 400

Melt the butter and pour into a 8 x 8 baking pan, making sure the bottom of the pan is coated. In a large bowl beat the eggs slightly and stir in the cheeses. Combine the flour and the baking powder and add to the egg cheese mixture, blending thoroughly. If desired, add the chopped ham. Pour into the baking pan and bake at 400 for 15 minutes. Lower the oven temperature to 350 and continue bating for another 20 minutes. Cut into squares and serve hot.

Baked Pears

Cut stem and tip off pear

Cut pear in half

Cut core out of each half and cut out inner stem and peel pear

Place in baking dish flat side down

Lightly sprinkle with nutmeg

Heavy sprinkle with cinnamon

Melt 3 tablespoons of butter

Add 5 to 6 tablespoons of brown sugar to melted butter should be pasty not runnyPut spoonful of butter/brown sugar mixture on top of each pear

Bake 20 minutes at 350 butter mixture will bubble and fork should slide into pear

Place on plate and drizzle sauce from pan over pears

If serving alone garnish with slice of orange
